Triple B Spinach Salad With Blueberry Pomegranate Dressing

This Triple B Spinach Salad with Blueberry Pomegranate Dressing is an original recipe I created and entered into the #BlueberryToss Contest for the 2016 Food and Wine Conference. The Food and Wine Conference is a food blogger conference where bloggers can attend to learn new skills to improve their blog or to expand their blog into other areas. It takes place annually in Orlando, FL and this year’s conference is from May 13-15, 2016.


I am excited to be able to attend this year's conference since this will be my second time attending and I had a blast last year! I can't wait to experience it again and learn more about what is going on in the world of blogging. Last year I learned so much from all of the speakers, made new blogger friends and ate so much food that I can't wait to see what is in store for this year's conference. Make sure to follow me on social media since I will be posting pictures of all the events and of course the food during the conference.


Wish Farms is one of the sponsors of this year’s conference and they specialize in growing strawberries and blueberries in Florida. They grow some of the most delicious blueberries and strawberries in the State of Florida.  I can testify how delicious their berries are because the supermarket by my house carries their blueberries and strawberries and I buy them often. I put their blueberries in my oatmeal for breakfast and eat the strawberries as a snack or with lunch or dinner.


Wish Farms along with the Food and Wine Conference are hosting a recipe contest for food bloggers to develop a creative and original salad recipe using at least one serving of blueberries. My Triple B Spinach Salad contains blueberries, beans and bulgur wheat over a bed of spinach leaves.  It's topped off with some strawberries, sunflower seeds, crispy onions, chopped pecans and let's not forget a tangy blueberry pomegranate dressing.

Triple B (Blueberries, Beans and Bulgur Wheat) Spinach Salad With Blueberry Pomegranate Dressing

Yield: 2 servings


Ingredients:

Blueberry Pomegranate Dressing:

2 cups fresh blueberries

1/4 cup olive oil

1/4 cup pomegranate red wine vinegar

1/4 cup water

1 tablespoon Dijon mustard

1/4 teaspoon salt

1/2 teaspoon black pepper


Triple B Salad:

1 package baby spinach

1 cup fresh blueberries

1 can low sodium red kidney beans drained and rinsed or 1 cup dried red kidney beans cooked

1 cup bulgur wheat cooked

1 cup strawberries sliced

1/4 cup pecans chopped

2 tablespoons crispy onions

2 tablespoons sunflower seeds


Directions:

Blueberry Pomegranate Dressing:

1. Add all of the ingredients into a blender.

2. Blend until all of the ingredients are mixed.

3. Set aside.


Triple B Salad:

1. Wash spinach leaves and place on a plate.

2. Add the blueberries, red kidney beans, cooked bulgur and sliced strawberries on top of the spinach.

3. Top with crispy onions, sunflower seeds and chopped pecans.

4. Drizzle the blueberry pomegranate dressing over the entire salad.
