Apple Cinnamon Cupcakes

In honor of the arrival of fall, apple season and becoming a brand ambassador for Foodstirs, I decided to make some apple cinnamon cupcakes using one of the baking kits that Foodstirs offers. Foodstirs is a company that focuses on bringing families together to create memories through baking. They sell a variety of baking kits that consists of packaged mixes to make cookies, cakes, brownies and pancakes.


The baking kits contain basic baking ingredients that are organic, non-GMO, fair trade and also vegan. For this recipe I used the Celebration Cupcake Baking Kit which includes organic vanilla cake mix, organic vanilla frosting, cupcake liners, dye-free sprinkles and decorative flags. This kit along with all of the other Foodstirs kits have no artificial ingredients and no artificial dyes. You can follow the instructions on the box to make regular vanilla cupcakes or you can get creative and invent your own recipes which is what I did. I decided to incorporate apples and cinnamon to create a tasty treat for you to enjoy this fall. These are vegetarian cupcakes since the additional ingredients in this recipe I used contain animal by-products such as eggs and butter.


In a bowl add the organic vanilla mix, apple, cinnamon, butter, eggs, soy milk, coconut yogurt, vanilla extract and mix them together to form the batter. Pour the batter into the cupcake pan and bake at 350°F for 20 minutes. For the frosting, mix the organic vanilla frosting mix with soy milk and butter until smooth and creamy. Spread the frosting on top of each cupcake, sprinkle some cinnamon and enjoy!

Apple Cinnamon Cupcakes

Yield: 12 servings


Ingredients:

Cupcakes:

1 Foodstirs Celebration Cupcake Baking kit or vegan cake mix

½ cup vegan butter softened

2 vegan eggs

¼ cup soy milk

1 teaspoon vanilla extract

¾ cup unsweetened plain coconut yogurt

1 teaspoon ground cinnamon plus extra for sprinkling

½ cup gala apple peeled and diced into small pieces


Frosting:

1 bag Organic Vanilla Frosting (included in the kit) or

1 stick vegan butter softened

1-2 tablespoons soy milk


If not using the frosting in the cupcake mix:

1 stick vegan butter softened

1 ½ cups powdered sugar

¾ teaspoon vanilla extract

1-2 tablespoons soy milk


Directions:

Cupcakes:

1. Preheat oven to 350°F.

2. Place cupcake liners in a regular size cupcake pan.

3. In a bowl beat the vegan eggs.

4. Add the butter and continue to beat.

5. Add the soy milk, vanilla extract, yogurt and continue mixing.

6. Add the cupcake mix and cinnamon until smooth and creamy.

7. Fold in the apple to the batter until evenly distributed.

8. Pour the batter into the cupcake pan filling each cup about two thirds full.

9. Place in the oven and bake for 20 minutes or until a toothpick inserted into the center comes out clean.

10. Remove from oven and let cool.

11. Spread frosting over each cupcake and sprinkle some cinnamon on top.


Frosting:

1. In a bowl, mix all of the ingredients except for the soy milk with an electric mixer on low speed.

2. If the frosting is too thick, gradually add in 1 tablespoon of soy milk at a time.
